Mexican Fish Ceviche

Ceviche is a  classic, fresh dish to enjoy on the beach. Fish cured in lime juice with a touch of picante, this dish requires no cooking so it is perfect for hot summer days. 

Fish Ceviche


2 lbs of firm, fresh fish (red snapper or sea bass are excellent choices) cut into 1/2 inch pieces, completely deboned. Use the freshest fish possible.

1 ¼ cup of fresh squeezed lime juice

¼ cup virgin olive oil

½ onion, finely diced

1 cup of chopped fresh seeded tomatoes

2 serrano chiles, seeded and finely diced

Salt to taste



Tortilla chips or Saltine crackers


In a glass or ceramic bowl place the fish and cover with lime juice.  Let sit covered in the refrigerator for an hour, then stir, making sure more of the fish gets exposed to the acidic lime juice to ‘cure’ the fish.  Drain lime juice from fish.  Add olive oil, lime juice, onion, tomato and chile peppers. Let sit covered in the refrigerator for several hours for the flavors to blend.  Serve with chopped cilantro and slices of avocado with tortilla chips or saltine crackers.
